Ingredients

1/3 cup Olive oil
3 Tablespoon Lemon juice
3 Cup Curly Parsley, finely chopped
1 Cup Cucumber, diced
1 Cup Tomato, cored and diced
2/3 cup cooked Bulgur Wheat or Brown Rice
salt and pepper, to taste (generously, especially w/the salt)

Directions

1. Cook the wheat or rice, let it cool.

2. Chop all veggies up and mix it in one big bowl. Add wheat/rice. Add salt and pepper to taste, a lot more salt then pepper.
