Turkey Gravy

Ingredients
Left over broth from pan + 2-4 cups more low-sodium Broth
4 Tablespoon unsalted or salted Butter
4 Tablespoon Flour, or more
0.5 Cup dry white wine
0 Tablespoon left over veggies from turkey, blended
2 Bay whole leaves
0.5 Teaspoon black Pepper
Directions
- Remove veggies from cavity of turkey. Add 3 quarters of onions, 3 or 4 stalks of celery, 5 or 6 baby carrots. Blend in mixer.
- Remove any large bits and chunks of skin or fat from bottom of pan. Put over burners and set to low. Add maybe 1-2 cups broth to start. Taste for salt.
- If salt, use unsalted butter. Stir.
- Add a couple of spoonfuls of veggie mix, I think I added maybe 3 or 4 spoons. (I didn't use it all, it's think.)
- Start adding flour, a tablespoon at a time. You want it very think, but not extremely think.
- Add about half cup of wine, whisk while adding.
- May need to add more flour.
- Once you get it about right, add bay leaves and pepper to taste.
- Cook for another 5-10 mins.

Notes
2023 - made this and it was super good but it was very salty, so next time use unsalted butter. Don't add any salt until the end. The veggies help.
