Olive Garden Zuppa Toscana

Ingredients

1 Pound Italian Sausage, Sweet or Hot
0.25 Pound Bacon
1.5 Pound Russet Potatoes, peeled, cut in half lengthwise, then sliced 1/4-inch thick
1 Cup Onion, chopped
6 Cup Chicken stock, aka broth
2 Cup Kale or Swiss chard, chopped
1 Cup Heavy Cream or Half and Half
Salt and Pepper to taste

Directions

  • Prep: 15 Minutes
  • Cook: 4 Hours
  • Total: 4 Hours

1. In a large skillet over medium heat brown together the sausage and bacon.

2. Drain off excess fat and place into a slow cooker.

3. Add sliced potato, onions, chicken broth, and cook on low for approximately 3 to 3 1/2 hours.

4. Add chopped kale and heavy cream or half and half about 30 to 60 minutes before serving.

Going to try substituting the Italian Sausage with Turkey Italian Sausage.
