Cheesy Mashed Cauliflower

Ingredients
1 Head Cauliflower, chopped into florets
Salt, to taste
2 Tablespoon Butter
0.25 Cup Heavy Cream
Black Pepper, to taste
0.75 Cup White Cheddar, shredded
1 Bunch Chives, , chopped (optional)
Directions
- Prep: 30 Minutes
- Cook: 30 Minutes
- Total: 1 Hour
- Preheat an oven to 350 degrees F (200 degrees C). Lightly grease a baking dish.
- Bring a pot of water to boil over high heat. Add a pinch of salt and the cauliflower and boil for 15 minutes, or until the cauliflower is soft.
- Place cauliflower in large colander, with ice running cold water over to cool it down. Let drain for 15 mins.
- As you're moving the cauliflower from the colander to the food processor, squeeze as much water from it as possible, it doesn't matter if it looks a little weird or looses its shape - it's going to be pureed anyway.
- Using food processor, puree cauliflower until smooth and add back into pot.
- Add butter and salt to cauliflower and cook over medium heat for 5 (?) mins, mixing frequently.
- Turn off heat and add cheese and pepper then mix thoroughly. Add cream and mix until it is absorbed. If using, stir in chives.
- Pour everything into baking dish and bake for 30 more mins.
- If desired, garnish with remaining cheese and chives.

Notes
The sharp white cheddar flavor adds a little bit of earthiness to the cauliflower and does lend it a more potato-like flavor.
