Cheesy Mashed Cauliflower

Ingredients

1 Head Cauliflower, chopped into florets
Salt, to taste
2 Tablespoon Butter
0.25 Cup Heavy Cream
Black Pepper, to taste
0.75 Cup White Cheddar, shredded
1 Bunch Chives, , chopped (optional)

Directions

  • Prep: 30 Minutes
  • Cook: 30 Minutes
  • Total: 1 Hour
  1. Preheat an oven to 350 degrees F (200 degrees C). Lightly grease a baking dish.
  2. Bring a pot of water to boil over high heat. Add a pinch of salt and the cauliflower and boil for 15 minutes, or until the cauliflower is soft.
  3. Place cauliflower in large colander, with ice running cold water over to cool it down. Let drain for 15 mins.
  4. As you're moving the cauliflower from the colander to the food processor, squeeze as much water from it as possible, it doesn't matter if it looks a little weird or looses its shape - it's going to be pureed anyway.  
  5. Using food processor, puree cauliflower until smooth and add back into pot.
  6. Add butter and salt to cauliflower and cook over medium heat for 5 (?) mins, mixing frequently.
  7. Turn off heat and add cheese and pepper then mix thoroughly. Add cream and mix until it is absorbed. If using, stir in chives.
  8. Pour everything into baking dish and bake for 30 more mins.  
  9. If desired, garnish with remaining cheese and chives.

Notes

The sharp white cheddar flavor adds a little bit of earthiness to the cauliflower and does lend it a more potato-like flavor.
