Ingredients

1 loaf Cocktail Rye bread
1.5 Pound Corned beef, deli slices
1 Pound Swiss Cheese, deli sliced
1 (16 ounce) jar Sauerkraut
1 bottle Thousand Island dressing

Directions

  1. Preheat oven to 350F.
  2. Cut Corned beef slices into 1-1.5" strips (about as wide as the breads)
  3. Quarter Swiss cheese slices, the quarters will be about the same size of breads.
  4. Spray large baking sheet with cooking spray. Arrange bread slices onto sheet, leaving a little space between each slice.
  5. Drain about a cup of sauerkraut.
  6. Spread dressing onto loaf, about 1/4 teaspoon on each bread.
  7. Using a fork, add about 1/4 teaspoon (more or less according to taste) of sauerkraut on top of dressing.
  8. Take 2 slices of corned beef fold and layer on top of kraut. Top with a slice of cheese.
  9. Bake in oven for about 10mins. The kraut and dressing can make the bread a little soggy, so don't be afraid to cook these longer if needed.
